You can skip the soaking if you use mung beans flour
50 grams of protein in 1 cup of Moong dal? Maybe recheck that. It appears to have 15 grams. That is quite wite a difference.

I made these omelets and the second time, I baked in a casserole dish with the veggies in the middle layer. It was easy to cut them into serving portions and freeze them. They were delicious!!!!
