Vegan Thai and Vietnamese foods can be so tempting but limited to find. California has lots of great places. I'm in NJ and I cook a lot but it would be so nice to be able to trust going to places that are vegan. Those dishes look soooo good.

OMG, vegan khao soi is like a total unicorn in the U.S. - it's absurdly easy to find in Chiang Mai, but the restaurants here all basically lie and say "oh no, that wouldn't be Thai to make it without fish sauce." And I'm like, uhhhhh... I've literally had it at a dozen restaurants in Thailand which were exclusively staffed by Thai people.
