As this is about the basics of stir-frying, I wish Pailin covered the basics of a wok and the heat source. Most western kitchens don’t have a good-enough heat source to do a proper stirfry.

Hey Pai, at the beginning when you explained your distinction between a cook and a chef, that was very affirming. I've never cooked in a restaurant, but I cook often for myself and friends and family, and I've developed recipes that are just mine via experience and intuition. I'm no chef, but that description of yours makes me feel like I'm on my way
