Since this short is clearly an excerpt of a longer video, it may help to mention an important detail which it left out. The eggs for this recipe must be fresh. Otherwise, you risk a yolk leaking into the water as older eggs tend to contain yolks with a weak vitelline membrane. It's for this very reason that you can't use eggs older than medium-fresh for meringue.
What if you have to poach 12 eggs at a time like in a restaurant??

Funny I just watched Jamie Oliver poach an egg and said most people use vinegar then said why? Yes it firms up the white but not needed and just makes the egg taste of vinegar
