Vegan Jollof Rice ๐ฑ๐ Ingredients For the โmeatโballs: 180g vegan ground โmeatโ 4 tbsp cornstarch 1 small chili, 2 big onions, diced spices: pepper, maggi, salt 2 potatoes, peeled and cut in half 1 white sweet potato, peeled and quartered 1/2 cassava, peeled and quartered 2 bitter tomatoes (jahatou) 1 bell pepper + 3 spring onions, roughly chopped 3 large tomatoes, halved 200g canned tomatoes 4 tbsp tomato paste 3 garlic cloves 1 large chili 2 tbsp tamarind Spices: chili, herbs, salt, pepper Basmati rice 2 tsp Maggi, Salt 1/2 lemon Instructions 1.Blend the vegan ground meat with spring onions, spices, small chili and 1 tbsp each of the onions and bell pepper. Mix with the starch and a bit of olive oil and shape into small meatballs. 2.Cover the bottom of a large pan with frying oil and fry the cassava, potatoes and sweet potato until golden brown on both sides. Remove them, then add more oil and fry the vegan meatballs until golden brown on both sides. Remove them and also the oil. 3.Fry the tomatoes in a little olive oil for 5 minutes with the lid closed. Blend them together with the tomato paste and canned tomatoes. 4.Roughly blend the onions and bell pepper. Fry them in olive oil until golden brown, then add the tomato sauce and let it simmer briefly. Add about 1L water and boil for 5 minutes. Add the potatoes, cassava, big chilli and bitter tomatoes and cook for another 20 minutes. 5.In a mortar, crush the garlic with the spices into a paste. After about 15 minutes, add most of it to the pan but keep 1 tbsp aside. Add the vegan meatballs as well. 6.Steam the rice briefly in a sieve. Remove all vegetables and meatballs from the pan together with a few spoonfuls of sauce. To the remaining sauce, add 0.5L water, the rest of the spice paste, 2 tsp Maggi and 1 tsp salt. Add the rice and let it simmer on medium heat, covered with foil, for 10โ15 minutes until the water is fully absorbed. Stir occasionally. 7.Soak the tamarind in hot water and mix it with your hands until it turns into a sauce (Dahar). Serve the Jollof rice with the vegan meatballs, vegetables, Dahar and a fresh lemon. Enjoy! ๐ง๐ #veganrecipe #recipe #veganfood #africanfood #food
