In this MasterChef Masterclass, Gary Mehigan shows you how to cook a classic Italian Bistecca steak, grilled over high heat for that perfect char while staying juicy and tender inside. If you’re looking for a restaurant-quality steak recipe, this is it. πŸ₯© Perfectly cooked T-bone steak πŸ”₯ Charred on the outside, juicy inside 🌿 Classic Italian flavours with truffle RECIPE Bistecca with Roasted Tubers & Brown Onion PurΓ©e Ingredients 1–2 tbsp olive oil 1–1.2kg bistecca (dry-aged T-bone, 3–4cm thick), room temperature 1 tsp thyme leaves 1 tsp rosemary leaves Salt flakes Freshly ground black pepper Roasted Vegetables 250g waxy potatoes 250g Jerusalem artichokes 1 tbsp olive oil 4–6 baby carrots, scrubbed 8–12 baby onions, peeled 4 cloves garlic, peeled 1 sprig rosemary 2 sprigs thyme 20ml cabernet red wine vinegar Poached Salsify Juice of 1 lemon ΒΌ lemon, sliced 4 salsify, peeled and cut into 4cm lengths 20g butter Brown Onion PurΓ©e 1 tbsp olive oil 4 brown onions, peeled and sliced Cabernet red wine vinegar To Serve Shaved black truffle Rosemary and thyme leaves Method Steak Preheat barbecue to medium heat. Brush steak with olive oil and season with salt, pepper, thyme and rosemary. Cook for 7–10 minutes per side for rare to medium-rare. Drizzle with oil, rest for 5 minutes, then slice. Roasted Vegetables Cut potatoes and artichokes into 1cm pieces. Heat oil in a frying pan over medium-high heat. Add vegetables, garlic, rosemary and thyme. Cook until golden and tender. Deglaze with vinegar in the final minute. Salsify Bring water to the boil with lemon juice and lemon slices. Add salsify and cook for 10–15 minutes until tender. Drain. Melt butter in a pan with a splash of water, add salsify and baste for 5 minutes. Brown Onion PurΓ©e Heat oil in a pan over medium-high heat. Cook onions for 20–25 minutes until caramelised. Add vinegar and a splash of water, cook for 5 minutes. Blend until smooth, then pass through a sieve. To Serve Place sliced steak on a board. Drizzle with onion purΓ©e and top with roasted vegetables and salsify. Finish with shaved truffle and herbs.
