I am from Brazil. I went to this restaurant in 2017. It was so amazing. The beef was spectacular. I recommend everyone to see this place and try all the beefs. Hugs.
Matambre is stuffed flank steak. When eaten as an appetizer, or light lunch, it's the boiled version, which is paired with potato salad. There's also a dinner version that is roasted or grilled. BTW, milanesas are NOT schnitzels. The milanesa comes from Milan. Unlike schnitzels, the egg wash has minced garlic and parsley.
Even the corned beef from argentina are amazing, must be awesome to eat everything I saw here.
I had to wait an hour to watch this because i am slow cooking a beef stroganoff and there was no way I was watching a beef buffet without a plate of food in front of me and I think I made a very smart decision

14:10 You said it perfectly here, and that's why we don't usually go with fancy sauces or rubs or other spices. The meat is so flavorful, tender, lean and fatty where you want it to that just salt and pepper will do the job.
Argentinean meat is extremely healthy, no way you can have a hearth attack if you eat asado every day.
