Thats "Maodoufu" fermented tofu; sometimes called fuzzy tofu because of the specific mold growth process like similar to blue cheese. Its why the outside looks soft and hair-like. depending on how its cooked it tastes and feels a semi firm piece of cheese and tastes like if feta cheese had a baby with munster cheese; modestly fragerant, lightly spiced, but creamy; so a smellier version of pepper jack cheese. Its completely safe to eat outside the country of china but make sure your aware of the process as theres a limit to fermentation before its delclared "rotten" and "unedible" so check your country's food laws if you ever plan on selling it or purchasing (yes there are food brands in asian supermakets that sell it). Bad Maodofu has black, yellow, or green spots; also dont eat it raw it still has cultivated mold on it. its tastes pretty good even if it looks initially unapealling from a told description. no it doesnt have to be seasoned spicy, thats just a matter of prefrence and popularity within china before cooking. also thats probably Siaoxing cooking rice wine and possibly a dash of vinegar if i had to guess because ive had it cooked using both items when i was introduced but thats just how i was introduced to the dish. if your not intrested in chinese cooking wines just get any prefrenced rice wine vinegar. the food itself acts similar to kimchi. from a week to a month and sometimes even a whole year the longer it sits the more pungent the flavor so long as you check the seal and turn it over time to time which is why its being put into a container for later for your decision on when to cook it at home.

this is not a "street food" it's more like making a side dish that you can have it later pair with noodle, rice or congee. the liquid she added is not sauce but baiju a type of liquor with high alcohol contents and the dish is extremely salty and spicy.
