Sometimes I like to take it a step further. I love batch chopping a bunch of different veggies and fragrants- peppers, onions, garlic, ginger, carrots, celery. If I want to make some soup, I have a good mirepoix or Cajun holy trinity ready to go. I add the chopped veg to my eggs in the morning. I also do this with rice and any left over dairy products so I’m not throwing stuff out and have it on hand even if I don’t use it super often. I batch prep some “healthier” junk food- my fave is bananas cut in half with a popsicle stick, frozen then dipped in peanut butter, frozen again and dipped in dark chocolate mixed with coconut oil, then frozen again to make a slightly healthier ice cream bar. I do love eating the same meal over and over again though, so I do just meal prep a lot of the time but for 3 days instead of a week. Also if you’re going to fridge prep, look up how to best store each ingredient so that they stay fresher longer- like carrots and celery do really well submerged in water, berries do better in closed containers, etc. I hope if you read this, maybe I was helpful:)
