I’ve been cooking for over 13 years and now im looking into food science, what im passionate about is not necessarily product development but why you should let the steak sit and rest before you cut or why eggs bind. What is the study of that? I would love to possibly teach but having difficulty in knowing exactly what I want to study ?? I love to cook but being an executive chef isn’t really my dream. Cooking all the time isn’t really my goal it’s understanding and learning all the science behind the cooking.. is there a specific field for this?

Where I live, most people think food science is about adding poison to foods to make them more tasty and last longer on the shelf. Maybe they aren’t wrong, but is that all it is? :-(

I didn't want to be a chef per say, but i wanted to study food and i was so stressed out that what i wanted to do didn't exist.
