My personal head Canon is that these were the souls of people who had been trapped here before, of course they likely hadn't been given a ship, so he, in his delusional crazy, accidentally wakes one up, it notices that there is a chance for someone to escape, and wakes the others to move the ship for him.

After this scene when the crew got stranded in the island. Calypso is shown petting one of the crab and saying "mighty jack, he's closer than you think" then the ship is shown being carried by the crabs towards the sea. Calypso also turned into crabs when they freed her. I'm pretty sure she summoned those crabs to escort jack out of that dessert. That place is called davy jone's locker after all. Where no soul can escape. Yet jack jusy from licking a crab managed that? Not without the help of the goddess of the sea.
