Paragraph guy here: So Freddie was a friend of Cruz’s brother when they were kids. He had a history of gang violence, and because Cruz was able to get his brother out, Freddie asked him for help getting him out. Freddie would hang out in the firehouse for safety and stability, but their new captain, Patterson, kicked him out because he was trying to maintain order in the firehouse, and because Freddie was seen with a loaded gun while in the firehouse. Hermann and Otis let Freddie work at their bar, Molly’s, instead, but when Otis asked him to get the “short and fat” glasses, Hermann joked about Freddie being short and fat. Hermann had teased him like this before, and Freddie, being fed up, ended up stabbing him and then running out. Hermann ended up in the hospital and nearly died, but he luckily did survive. Freddie was found and arrested, and he felt guilty and was afraid that Cruz would try to kill him. There was also a part where Cruz felt guilty for letting it happen to Hermann, and was later reassured by him that it wasn’t his fault. I remember seeing this one on TV! The episode this happened on was the same episode where the "Boden getting framed to make it look like he assaulted his neighbor" arc was resolved.

Cruz is rigth Freddie fis let it happen. If you get angry at something then leave the situation until you have calmed down and then you adress what happened.

Hermann had a point, "You're gonna be serving people who are gonna bust your balls, you gotta learn to grow thicker skin", that's literally 101 when working in bars or similar services, people are gonna joke at you, joke back and the job gets easier. Stabbing someone over a weight/height joke is psycho behaviour
