Additional tips for curry. Use coconut milk/cream instead of any water/stock. You can actually start with it, reduce it, and then mix in your curry paste. From there you can add your meat -> vegetables. Add more coconut milk as you need. Usually with asian cooking we don't brown meat ahead/separately from the rest of the dishes. In this case, it would get the flavors from being stirred into curry paste. You can also use starches (potatoes are a common ingredient and they do such a great job of absorbing all that great flavor or thickeners like corn starch) Last tip for getting meat flavored in dishes is to dry brine it. All that means is to salt the meat thoroughly and leave it in the fridge for 15-30mins before you use it. I would recommend experimenting with how much salt you dry brine the meat with based on the dish you're making (keeping in mind that you will be seasoning the final dish at the end. You don't want overly salty meat at the end). Love seeing your cooking journey!
