Small suggestion for the bridge. The bridge obviously has fallen into the water, so some rubble in the water would be perfect, + it would hide the floating gravel, make risen blocks make more sense and just look better

You could rotate the grey banner by 180 degrees, so the little wood stick is on top. This would make the banner look like it's actually hung up on the washing line with a wooden laundry clip.

the trees going in made me realise, the square looks very similar to the shopping district main square (the spawn area) I love the idea of greywick being a dark mirror of the hermitcraft server itself.

11:00 suspicious stew! It's a strong food item with an added effect, which can be good or bad. Having it in the game could add depth, and if some of the rare sellable oddities are flowers, it could add another avenue for difficult decisions. Cash out, or brew?
5:56 I think just adding more gravel and maybe cobble to the riverbed would do a lot of heavy lifting to make the extended bridge feel a little less out-of-place. the environemntal cobble/gravel is the remnants/ruins of the bridge that wasnt swept away

Tango, stairs have similar water rules to water sources. place full blocks under the stairs and they will form sources as you were expecting.
considering what concrete powder does when in contact with water gravel is definetly the right choice imo or at least the easier one
