In reality, methylamine is super easy to make. They needed it to be difficult for the plot of the show, but in the real world it's a vey simple synthesis. Walt could have done it in his sleep.

This is not the first time we seen him operating a forklift. When Gus got rid of Victor, it was Jesse operating the barrel Victor was in to get disposed of. I'm sure Gus wouldn't be ok with someone in his superlab who can't operate a forklift safely so he probably sent Jesse to become certified off-screen.
