Prickly pear is absolutely delicious and full of water.... Probably one of the best cactus to happen upon in a bad situation.
Although not the same species of cactus, here in Mexico is really common to see Opuntia cacti or Prickly Pear Cactus, colloquially named "Nopal". A lot of the times its grilled to give it a better flavor but it can also be eaten raw (without the spines of course). Good source of manganese, vitamin C, antioxidants and calcium.
Alternative technique : leave spikes on for extra crunch
