The Terminator could've still been powered on and collecting full audio data with its primary CPU removed using a low-power backup CPU. He would've observed the mother's distrust and consciously processed it afterwards, in which case I believe he decided to pretend he didn't hear it to try to preserve their trust.

This was such an important scene they didn't include in the original take. It shows skynet was more than just a humanity killer. It was making choices that didn't always add up to what we believed it wanted

I always thought this scene was a little weird with the neural net processor restrictions preventing Terminators from learning things outside of their mission parameters. (Which I guess makes sense since this wasn't in the theatrical release) Though what I really like about this scene is really the exchange between Sarah and John.
