Soup Dumplings: Heat pan with oil first, then once hot add dumplings, wait until bottom browns then add the water and cover, remove cover once steamed and let water evaporate.

you have to heat the oil to very hot and THEN put in the dumplins. Move them around for about 30 seconds, the bottoms get crispy. They wont stick to the pan anymore.
all that bow tie drama and we didn't even see the final results!? we're gonna need to circle back on that :)
