I made this video a few years back and I misspoke on the first scentence of that video. Of course it went pretty viral (8.4 million views to date) so now I have to live with the fact that I said "mushrooms are not vegetables" (they are) when I meant to say "mushrooms are not plants" (they aren't). What makes mushrooms so resistant to overcooking as opposed to most plants is that they're made out of chitin as opposed to cellulose. It's actually kind of similar to keratin (which is a protein in your hair). It's also found in the exoskeleton of bugs, crabs, and lobsters. It's pretty much digested in our bodies as fiber though. Regardless of all this mushrooms are considered a vegetable, which is just a culinary term. And finally -- I can't believe I have to actually say this, but it is one of my most common comment on any mushroom video I make -- mushrooms are completely vegan on their own. YES thanks for this! Just started cooking without as much oil to avoid calories and I realized you can just caramelize these on their own how amazing! And I'm able to add a small amount of sauce or marinade and it works great!

I love putting mushrooms on our smoker grill with a bit of hot sauce or bbq sauce and they get all slightly shriveled and slightly chewy and smokey flavored...delicious
I'm polish and we have this dish called "krokiety", these are pretty much crepes stuffed with mushrooms and soured cabbage. This is a staple and my family always make it as one of the dishes for Christmas. Everyone loves them, so we always make a lot of them for the entire family to enjoy and we usually use like 1-2kgs of mushrooms alone. We either chop them finely or shred them, and then we're frying them for about 40 minutes to an hour. A pan is always full and we have to pour away the water very often, so they won't swim in there XD. Once they're nicely cooked, then we add cabbage, which also releases a lot of juices, so it takes even longer. Never mind if we make pierogi with mushrooms and cabbage as well, then you can add another half of the stuffing. I swear it takes forever to saute all the mushrooms and often we have to do it in batches XD.
I love those kind of tutorials, going straight to the point, instructive yet with one silly thing making all seriousness fall apart. 😂

The reason mushrooms are so forgiving is because their cellular walls are made of chitin, a compound found in tough insect and crustacean exoskeletons. They are extremely resistant to heat. Most of the cooking process of the mushroom is simply removal of water and then heating to a pleasant consistency. The chitin retains the mushroom’s shape and prevents further cooking. Once the water is gone, they are sponges.
