I don't know if you're taking these, but here's an idea for a then we fight that I think is up your alley: Both players vote to determine which Pokémon the turn player gets. If the votes match, the turn players get that Pokémon, but if the vote is split, the turn player gets the Pokémon with NO votes. For example: It's Player A's turn and the starters are Charmander, Squirtle, and Bulbasaur. If both Player A and B vote for Charmander, Player A gets Charmander. But if Player A votes Charmander and Player B votes Squirtle, Player A gets Bulbasaur because that the one no one voted for. I think this leads to some silly mind games of "do I vote for the one I want or the one I want to avoid" and the reactions at the reveal would be hilarious.
