There is actually a mcu reason too. After he took the cure in his movie it actually slowly did make him weaker. In that next fight alone it was the first time he bled.

Yeah hulk grows with anger since it's basically banner just in hulks body he's going to be smaller because he's calm

Professor Hulk was a well written character that allowed Hulk and Bruce Banner to get the spotlight for once

OR.... Make Thanos as badass as he is in the comics, so that a powerful Hulk would still lose to him. If you make the bad guys powerful/intimidating enough, you don't need to nerf the heroes as much.

No the anger isn't gone, it's controlled when in hulk form and control is the opposite of what the hulk needs cause he can't let loose like he needs to at times. It's hulk trying to realize he need banner, and banner realizing he can't always limit hulk
