I am a local, there is actually a single aqueduct left in the city (about halfway from st. Barbara's to Bylany) at 49.9420769N, 15.2452733E, it is from the latter half of the 15th century, so not from the time of the game, but historical nonetheless (built when the “current” fountain was built).

I always thought that line Henry says about the fountain was part of a quest I never was able to find. I figured it was probably under the city somewhere in the tunnels, but just chalked it up to something I missed. But this actually explains it. 10/10 video. Awesome.
