It's not technically a "boss" but it's sure tough enough to kill early on: Gloom Hands (or, Gloom Spawn) from Tears of the Kingdom. I accidentally stumbled onto one of these abominations within the first few hours of wandering around (so I'm still weak af). Getting hit by that thing the first time put the fear of god in my soul worse than any of the guardians or Lynels ever did.

It's not a boss, but the Wild Saurian in the first area of Final Fantasy XII was definitely a troll on the devs' part. They knew what they were doing.
What's so annoying about Breath of the Wild is that there are multiple high-rewarding side quests within the Hyrule Castle. And the map of the castle only fills in as you explore it. Andddd you can't see the names of various rooms you've visited unless you're outside this boss map. So it is SO DIFFICULT to avoid triggering Ganon too early in BotW.
The Bogdo fight in Jedi Survivor was a piece of cake. Because I was so scared I was gonna lose and replay it twenty times

11:28 not only can you fight him early, you can fight him before you unlocked healing. When I first got the game I spent about 2 hours straight trying to figure out that fight. The result of that being when I finally won and moved on I got the realization of “oh if I waited just 5 more minutes I could’ve healed”
If you somehow manage to "accidentally trigger" the Calamity Ganon fight after fighting through a veritable army of spider mechs to even approach it, you are a level of klutz that needs to be studied.

The Persona 5 one could be applied to all of the (main) modern Persona titles: in 3 it's the same as 5: you must stay on the same floor of Tartarus for too long. In 4 he'll spawn if you open enough chests.
Not to mention deciding it might be a good idea to swim straight for the Aurora when you start playing Subnautica.

For the New Vegas one, you don't even have to go that far. Start going north instead of south and you'll come across a mutated wasp of some sort. You'll thing "I've fought giant cockroaches, mantises and bloatflies before, how hard can this one be?" So you take your starting peashooter and pop a few rounds. And if you hit at all, the bullets plink off its carapace, and it proceeds to quickly tear you a new one. That's most people's introduction to the cazadors.
In Terraria, there's a boss that will just choose to attack you for existing too far on the left or right side of the map. It's the King Slime, and it used to be only available during a slime rain, but an update changed it to where he can ambush you now.
